A New (and Improved) Way to Fiesta – District Taco

Want something fun to serve this week? If you’re looking for new ideas for Mexican Mondays or Taco Tuesdays, then these delicious, easy recipes are just what you need. With 10 minutes to prep and 15 minutes to cook, you can have these zesty, fresh flavors on the table in less than half an hour. 

If you’re wondering what to fix for dinner, look no further than Fiesta Tacos.

Ingredients

1 18 oz package of popcorn shrimp baked according to instructions on the package. We like the quality and taste of SeaPak®. 

10 flour tortillas, soft taco size. Heat them according to package directions for ease in folding your tacos.

1 14 oz package of coleslaw mix without the dressing or shredded cabbage

8 oz shredded white cheddar cheese

1 large, diced tomato

1 sliced and diced avocado

2 cans sliced black olives

Sauce – see recipe below

Lime wedges

Sauce

8 oz sour cream

1 package ranch dressing mix

1 packet taco seasoning

Milk, as needed to thin

Mix ingredients together in a small bowl until you reach your desired consistency. 

Directions

Assemble tacos in the following manner:

  • Spread a tablespoon of prepared sauce over each warmed tortilla. 
  • Add shredded cabbage, cheese, diced tomato, avocado, and some olives.
  • Top with cooked shrimp.
  • Fold

Serve with lime wedges and additional sauce.

1 can black beans, drained and rinsed

¼ cup chicken broth

1 11 oz can corn, drained

1 16 oz container fresh salsa 

2 diced avocados

2 cups chopped romaine lettuce

Fresh cilantro

Lime wedges

Directions

  • Heat the black beans and broth together in a medium saucepan. Season with salt and pepper.
  • Combine corn and salsa.
  • Divide rice between 2 bowls. Top with black beans, salsa, avocado, lettuce, and shrimp. 
  • Serve with cilantro and lime wedges.
