Grilled Steak Tips to Know Just in Time for Summer

1. Let the Grilled Steak Get Warm 

Before we discuss how to cook beef on the grill, the steak has to be grill-ready. To achieve this, let your steak warm up after taking it out of the fridge. It should get to room temperature after 1 or 2 hours. 

If you skip this step, you will likely end up with some burnt, grey steaks! 

2. Season, Season, Season 

Kosher salt and freshly cracked black pepper are your best friends when it comes to grilling a steak.  

Generously season your steak with kosher salt while it’s sitting out, or even a day before if you have the time. And right before you’re ready to grill, pat the meat down with a paper towel and salt it one more time. 

You want to put the pepper on the steak after you’ve grilled it. If you do it before, the pepper will burn and leave an unpleasant taste in your mouth. 

3. Two Levels of Heat 

Whether you’re using an infrared grill or a gas grill, you should have two different zones of heat. 

The first zone should be very hot to get a nice sear on the outside of the steak. When you put your hand 2 inches above the grill, you shouldn’t be able to keep it there for more than 2 seconds. 

The second zone should be on low heat to finish the cooking.

4. Use a Meat Thermometer 

When your steak looks about ready, stick a thermometer in the thickest part to check its doneness. 

Steak is usually best when cooked rare or medium-rare. For a rare cook, the internal temperature should be between 120 F and 130 F. For a medium-rare cook, the temperature should be between 131 F to 135 F. 

Visually, a rare steak should be brown on the outside and red in the middle. A medium-rare steak should be darker brown on the outside and pink-red in the middle. 

5. Let Grilled Steak Rest 

As tempting as it may be to dig into the steak right away, you have to let it rest first.

For the best results, let your beef rest for about 5 to 10 minutes. This allows the meat to retain its delicious juices rather than pouring out all over your plate.
